The sturgeon is a family of fish native to subtropical, temperate and sub-Arctic rivers, lakes and coastlines of Eurasia and North America. Sturgeons have very long bodies, growing 7 to 12 feet in length. Some species can grow up to 18 feet in length. Unlike most other fish that are covered with scales, the sturgeon is covered with bony plates called scutes. They are a toothless fish, and so mostly drag river bottoms with their mouth to catch food. In many countries, sturgeon is a very popular food, particularly their eggs for cavier.
